So last night I made "faux mein", an attempt at homemade lo mein. It was basically roast pork (I roasted one and used some for the faux mein, and the rest is for sandwiches this week) and cooked spaghetti, thawed frozen veggies (I had carrots, green beans and broccoli on hand), and some sliced up cabbage and green onions, sauteed in vegetable oil with soy sauce. It turned out good and I even had leftovers for lunch today! Smile

I'd say use about the same amount of pork and spaghetti, and double that of veggies. I used a whole bunch of green onions (scallions). Could also add some garlic and onion. Add soy sauce carefully, but the spaghetti should be "stained" brown from it when you're done.

OMG why did I just find this? I'm an incurable foodie. Iron Chef is my favorite Olympic event, lol! I'll have to pitch a tent in here and try to drum up more activity....maybe free samples, lol.....Haha

OMG - I like Iron Chef too. I actually have gotten some ideas on how to prepare dishes differently. Too many times I get into a rut -- I always look for new ideas.

Recipe for pizza casserole Puffyheart

Here's the recipe -- ingredients first, then directions
1 1/2 lb. hamburger
2 cups macaroni
12 ounces tomato sauce
1 can cheddar cheese soup
1 tsp. Italian seasoning
1 Tbsp. onion flakes or 1/4 cup diced onion
8 oz. shredded mozzarella
Hormel Pepperoni (to put on the top)


1. Brown hamburger and cook and drain macaroni; add hamburger to macaroni pot.
2. Add rest of ingedients and cook for a few minutes.
3. Put in greased 2 1/2 quart casserole dish and bake at 30 minutes at 350 degrees.
4. Top with mozzarella cheese and pepperoni
5. Bake 15 minutes longer.

Can you just spray the dish with Pam or something? Or do you specifically have to "grease" it with something?

Yeah, PAM will work just fine. I made it last night and turned out pretty good...also use a 15 oz. jar of tomato sauce, not 12. I don't even think they sell as 12 oz. jar of it anymore. It's funny how can sizes change over time with no apparent rhyme nor reason.

Made this today and it was phenomenal! And it's low calorie too!

Chili with Chipolte and Chocolate


Cooking spray
2 cups diced onion (about 1 large)
1 cup chopped red bell pepper
1 teaspoon minced garlic
1-1/4 pounds ground turkey breast
3 tablespoons brown sugar
2 tablespoons ancho chile powder
1 tablespoon unsweetened cocoa
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 (15-ounce) cans pinto beans, rinsed and drained
2 (14.5-ounce) cans diced tomatoes, undrained
1 (14-ounce) can fat-free less-sodium chicken broth
2 chipolte chiles, canned in adobo sauce minced
2 ounces unsweetened chocolate, chopped
1/2 cup light sour cream
Chopped green onions (optional)

Heat a Dutch oven over medium-high heat. Coat pan with cooking spray, Add onion, bell pepper, garlic, and turkey to pan; saute 8 minutes or until turkey is browned and vegetables are tender. Add sugar and next 9 ingredients (through chipolte) to pan, stirring to blend; being to a boil. Reduce heat; simmer 15 minutes or until slightly thickened, stirring occasionally. Add chocolate, stirring to melt. Ladle into bowls and top with sour cream and green onions.
